I am replacing the u-joints on my front shaft. I bought some new u-joints today, but am wondering if I will be able to grease them once I have the double cardan joint put back together? I am worried I won't be able to get the grease gun in between the double cardan and pump the joint full?

That nipple might rip off when your CV will flex (?) and you will not get the grease gun to fit in...
solution:
use an inward nipple and this adaptor

I have that type of u-joint on my double-carden... so far, no issues. Can be a bit of a pain to grease, granted. Just jack the wheels off the ground, and rotate the tires with your foot as needed.
Have you had issues with that type of u-joint, Dom?

It's not the u-joint that Dom is referring to. He's talking about the grease fitting. I use the ones that need the needle adapter for the grease gun, and it makes access to them easier in a double-cardan application.
